Introducing Football to Taste of Home Magazine!

TASTE OF HOME


With football season just beginning, why not score a goal in the snack department with great ideas and recipes from Taste of Home magazine.  The August & September edition is jam packed full of 216 fabulous recipes & tips,  which save you both time and money!  Why not make your tailgate party a bit unique and spruce it up with some recipes from Taste of Home,  one of the best recipe magazines on the market!  I found plenty of great recipes while browsing through their wonderful magazine so today I would like to share a couple of them with you.

I found this one on page 14 and as soon as I saw it I knew it would be a keeper!  This recipe is not only perfect for Football gatherings but also for any type of cook outs!  Why not have a BBQ at your next football gathering and then add these scrumptiously cute cupcakes. I love that you have the option of using brownies or cake mix and they are super easy to decorate.  The Cookout Brownies are absolutely a must have at your next cookout! 


COOKOUT BROWNIES

Prepare brownie mix according to directions on the box.  Sprinkle the brownies(or chocolate cupcakes) with orange-colored sugar to resemble hot coals.  Pipe on grill grates using black decorating icingUse Hot Tamales Candy for faux hot dogs.  Pipe grill marks on them using more icing. 

Another great recipe I found that will definitely spice up any tailgate party is on page 24 of Taste of Home magazine.   The Baja Chicken & Slaw Sliders are not your average slider and will certainly bring a flair to your football gathering!  I love the fact that the recipe calls for Hawaiian Sweet Rolls,  they make for a delicious sandwich.


BAJA CHICKEN & SLAW SLIDERS


Prep: 30 Minutes                             Grill: 10 Minutes                              Yield:  8 Servings

1/4 cup reduced-fat sour cream
1/2 tsp. grated lime peel
1/4 tsp. lime juice

SLAW:
1 cup Broccoli Coleslaw mix
2 Tbsp. finely chopped sweet red pepper
2 Tbsp. finely chopped sweet onion
2 Tbsp. minced fresh cilantro
2 Tbsp. finely chopped seeded jalapeno pepper
2 Tsp. lime juice
1 Tsp. sugar

SLIDERS:
4 boneless skinless chicken breast halves (4 oz. each)
1/2 tsp. ground cumin
1/2 tsp. chili powder
1/4 tsp. salt
1/4 tsp. coarsely ground pepper
8  Hawaiian Sweet Rolls, split
8 small lettuce leaves
8 slices tomato

DIRECTIONS:
1.   In a small bowl, combine the sour cream,  lime peel,  and lime juice.  In another small bowl combine the slaw ingredients.  Chill the sauce and slaw until serving. 
2.   Cut each chicken breast in half widthwise; flatten to 1/2 in. thickness.  Sprinkle with seasonings.
3.   Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.  Grill chicken, covered, over medium heat or broil 4 in. from the heat for 4 to 7 minutes on each side or until no longer pink. 
4.   Grill rolls,  cut sides down, for 30-60 seconds or until toasted.  Serve chicken on rolls with lettuce, tomato,  sauce,  and slaw. 
~Please note it is recommended that you use disposable gloves while handling the hot peppers and make sure to avoid touching your face.
